Peanut Butter Banana Pancakes
Is it possible to make a healthy pancake? I think this recipe gets close. It’s lighter than I expected considering it’s primary ingredient is peanut butter and banana, but it was sweet and didn’t need syrup. Try adding some sliced fresh banana on top and you have a low calorie, higher protein pancake!
INGREDIENTS
- 2 tbsp all-purpose flour
- ⅛ tsp baking powder
- ⅛ tsp table salt
- ⅛ tsp ground cinnamon
- 1/3 cup mashed banana
- 1/4 cup PB2 powdered peanut butter
- 2 tbsp lowfat milk
- 1 egg
- cooking spray
Stir together flour, baking powder, salt, and cinnamon in a small bowl.
Whisk together banana, PB2, milk, and egg in another bowl.
Add dry ingredients to wet and stir until just combined.
Coat a nonstick skillet or griddle with cooking spray and heat over medium-low heat.
Cook pancakes for 2-3 minutes per side or until golden brown.
Serving Size: 3 Pancakes
