Yellow Squash and Zucchini Chips Recipe
If this isn’t the easiest, healthiest little snack…the prep took 5 minutes and the bake time was 20 minutes. Done.
- 1 yellow squash or zucchini sliced thinly
- 2 tbsp olive oil
- 1/4 cup panko crumbs
- 1/8 cup parmesan cheese
- salt/pepper to taste
Preheat oven to 450 degrees. Line baking sheet with foil.
Take large seal-able baggie and add olive oil and sliced veggies. Seal the baggie and shake.
In small bowl, combine parmesan, panko crumbs, salt and pepper.
Add dry mixture to baggie with vegetables and shake until veggie slices are coated.
Place vegetable slices on baking sheet in a single layer and bake for 8 – 10 minutes on each side until golden brown.
